Go to Windhelm and sneak behind the guards as they make their rounds down those long, deserted, dark alleys at night. Also sneak behind the beggar near the forge after midnight, then pay for pickpocket training, save game, steal your gold back, reload if not successful, and repeat. It's better to level pickpocket first with training and pickpocketing your gold back, then use sneak to finish the character leveling when pickpocketing alone isn't enough to get the level. Then you'll be able to use both skills at the same time to get free training at most master trainers up to level 75 or so, until pickpocketing stops working because the gold is too high for success. At that point you can continue to get 5/5 training per level with pickpocketing, but you'll need stick to trainers that you can sell items to get their gold back into a successful pickpocket level. It helps to get the Merchant speech perk to be able to sell any item to any vendor, so that you can barter with expensive potions or banish enchanted daggers to level up as far as the trainer can do without spending a single gold coin to do it.

Go to Windhelm before meeting Aventus Aretino. Break into Aventus's house while he is doing the Black Sacrament in the middle of the floor. He won't pay attention to you. Go into sneak mode and, while looking Aventus, walk slowly backward into any corner. Make sure the eyes on the sneak indicator stay closed. If they are remaining closed, Either put something heavy on your PC key or rubberband your controller stick and watch an action film. I gained 80 levels of sneak and 5 character levels in about 2 hours. The game is MUCH easier with a sneak level of 100.

I played through the thives guiuld with 25 sneak. And beat it no problem. Just sneak around with a bow or dagger and kill them with stealth. Then join the Darkbrotherhood. They are an assians guild and your sneak can go up quite a bit. Or if you dont want to do that just go about your bussines in skyrim sneaking around. All of these things combined really helped my sneak go up its around 55 or so now.

Equip a plain iron dagger. Go to High Hrothgar. Wait for the Greybeards to start their whole meditation routine. Enter sneak mode and walk up behind one, then attack with the dagger. Don't overdo it and make him hostile. Keep doing this for as long as you want, and the sneak attack bonus will increase your Sneak skill relatively quickly.
