thus except for the DirectX 10 Acceleration (thus Gold) can take advantage of, all three versions are technically identical and should run without problem on a recent computer with powerful enough Processor and Graphic adapter.
the problems you encountered are probably due to the fact that FSX depends heavily on CPU, hard disk and video card.
even on a dedicated PC (thus where no other game or other programs are installed) it takes a lot of work to tune Windows & FSX for later to work smoothly.

bottom line is, your friends PC is most likely riddled with little sharewares, messengers, facebook & what not applications which keep "interrupting" FSX, thus causing the game to jump.
if you wish to enjoy FSX, the best is probably to create a separate windoooz installation dedicated to FSX and tweaked for it
