Brady Games has a good hard copy guide in soft cover for about $25, depending on where you shop. The limited edition version (appx. $30 and hardcover) includes a digital download as well. Included with that is a digital crafting guide which was a tremendous help to me in maxing out my crafting disciplines thus far and learning every recipe at every level. Another good resource is the GW2 wiki.

Since you already have weaponsmithing, I would suggest armorsmithing or possibly artificer or leatherworking. Armorsmithing would use many of the same base components. Cooking or jewelcrafting are other good choices, but they can get complicated and pricey at times. Ultimately, the crafting tends to be about the same at this point, so I tend to go with what I can utilize for that character or what I will be needing repeats of long term (artificer makes potions that have buffs and cooking makes the food for various buffs - ALWAYS in demand).

As you probably know, discoveries are the best exp return per mats used, and Jewelcrafting is the cheapest crafting discipline for one good reason: You only need 1-2 gems for a discovery, and if you use filligrees (?) you can actually get 2 discoveries out of 1 gem.

On top of that, you can transmute low level gems into higher level ones which may be cost effective should a certain tier be inflated.

Armorsmithing/Huntsman/weaponsmithing require tons of blue quality crafting materials (3 per discovery for first tier, and then 8 for second tier, and 15 for rares). The costs vary quite a bit but ultimately most of the time the total cost per discovery ends up costing more than a single gem, so you may end up spending as little as 1/8th the amount of money for a discovery.

So IMO Jewelcrafting is the easiest and cheapest exp for leveling. The only downside is that gold tends to run pretty expensive so that tier is a bit painful. The stuff is easy to find in Dredgehaunt Cliffs though.

Cooking can be good for leveling because of the sheer amount of discoveries it has but the complexity (having to look up stuff) and inventory space it requires makes it not very practical for leveling IMO - not ot mention that some ingredients can only be gotten from heart vendors.

Avoid cooking. While it is the fastest to level, it is also the most expensive crafting skill. Many of it's components can only be gotten through prestige shops.

Jewel crafting is also a bit of a bear. The jewels can be gotten from either normal or jewelry nodes, but they are not very common.

As for the materials themselves, cloth and leather are rarer than wood and metal because cloth and leather don't have gather nodes.

This means the cheapest crafting is going to be Armorsmihing (Heavy Armor) or Huntsmith (Ranged weapons) because they don't use cloth or leather.
