When you beat Mass Effect 3 and do the new game plus can you change Shepard's class? I'm currently the Soldier class. One of my friends told me Vanguard is pretty much Soldier with biotics and thought that could be fun.

Err, if you import a save you can select a new class. So you can import your Mass Effect 2 save, then select the class you want to play as in Mass Effect 3. That kind of solves your issue, doesn't it?

You can do it if you're on the PC and use gibbed's save editor http://svn.gib.me/builds/masseffect3/
(i think it may be possible on xbox as well but i have no idea the method)
find your "finished" save (my documents / bioware / mass effect 3 / save) folder, make a backup copy just in case, then delete everything in it except newgameplus.pcsav
open that file with the save editor, change your class to vanguard in the dropdown (under player->basic). then go to the "Raw" section and navigate to squad->player->class friendly name. the number for vanguard is 93956. change the value and then save the file.
then start a new game with "import me3 save" as usual.
(i don't know offhand the numbers for the other classes, but they're all sequential (93952 93953 etc) so it just takes some trial and error. stumbled across the question trying to google up the number for infiltrator)

No, sadly you cannot. I tried going from soldier to vanguard, but you must keep you class the same, although you can change your looks, obtain up to level X weapons, and you keep some war assets.
