I bought a Sega Master System, but I don't know which games to pick up for it.
I have Choplifter and it has Safari Hunt and Hang On built in the console.
What games should I get?

The SMS's ultimate game was Phantasy Star, an 8-bit JRPG years ahead of it's time (actualized characters, 1st person "3d" dungeons, amazing for the time graphics). Should be in any SMS owner's collection. It holds up pretty well, but it IS an old JRPG. expect minimal story in text and lots of random battles.
However, the system has some other gems. The later Wonderboy games (Wonderboy in Monsterland and Wonderboy III: The Dragon's Trap) are both really pretty good as well.
Golvellius is a personal favorite of mine -- It's similar to the original Legend of Zelda, but more action oriented than puzzle solving.
And many of the 3-d glasses games are pretty interesting as well (though you need the glasses, of course).

they are not just 8 bit pare downs of the 16 bit orginals but damn good games in their own right to boot
